About Woodstock Honey
Every day, over a billion gallons of the world’s most renowned drinking water flow from the snow-fed reservoirs of the Catskill Mountains to New York City. This water is famous for one reason: the pristine, untouched wilderness it comes from.
Our honey is born from that very same unspoiled environment.
Our apiaries are nestled deep in the woods, far from commercial farms. Here, our bees journey through the forest, foraging on a wild tapestry of native trees and flowers—maple, basswood, black locust, linden, catalpa, and cherry. The nectar from these forest sources is rich in minerals, giving our honey its distinctive dark color and bold, complex flavor. They also gather pollen and resins from oaks, pines, and hickory, adding to its unique profile.
This is why our honey is so different from the light, single-note honey made from agricultural crops like clover. Every harvest is a unique collaboration with Mother Nature, a taste of the wild Catskill forest at a moment in time.
